Careful supervision, every step of the way. The ripening of the cherry is closely monitored, when the time is right, the red cherry is hand picked early in the morning and carried to the wet mill. Harvested cherries are splayed out on the patio in the afternoon light. Wet processing begins with clean water followed by sun drying of the parchment coffee on raised tables.
