This coffee was aged in a French Remond barrel used to create Laelaps Wine’s flagship vintage, “The Rocks” Cabernet Sauvignon, using single vineyard grapes from Milton-Freewater, Oregon. We paired the elegant richness and dark fruit qualities found in the Rocks District of Milton-Freewater with the sweet, chocolate-forward coffee profile of Chiapas-based growers group, Ejidos San Fernando. The result is a cup that is tannic, oaky, yet intensely sweet and balanced.
