Finca Matalapa sits in the region of La Libertad near the country's capital, San Salvador. There, Vickey Dalton Diaz and her husband Francisco, plant coffee with bourbon and bourbon derived varietals, such as pacas, that are washed and processed at their own mill, Beneficio El Paraiso. Careful harvesting and beautiful preparation yield a cup with flavors of apple, tangerine, butterscotch, and roasted hazelnut.
