Finca Matalapa is located in the Balsamo mountains of El Salvador, on slopes where you can feel the cool ocean breeze of the Pacific. There, Vickey and Francisco Diaz grow bourbon and pacas coffee plants that are washed and processed at their own mill, Beneficio El Paraiso. The farm has been in Vickey Diaz's family since the 1850's, starting with her great-great grandmother. 

This coffee comes through our larger partnership with Emilio Diaz of Quatro M Coffees. We are now in our third year of purchasing lots from Matalapa, and we intend to keep coming back. The coffee has consistently yielded an exceptional cup; with notes of baked apple, pear, graham cracker-like sweetness.
