The Mahiga Coffee Factory is located in Nyeri County, which extends from Kenya's peak southward toward the aptial of Narobi. The region is nestled betwen the highland forests of Mt. Kenya and Aberdare National Parks, which provide ample supply of both clean mountain water and mineral-rich volcanic soil.
The Mahiga Factory's coffee gains much of its clean, colorful flavors through its meticulous washing process. Pulped seeds are fermented in water for 12 hours, then washed to clean off excess cherry mucilage. The coffee is fermented again for 12 to 36 hours, then cleaned and soaked in fresh water for another 16 hours. Afterwards the coffee is dried on raised beds, then meticulously sorted by quaility and size. This lot is composed solely of the "peaberry" screen size: these represent the smallest seeds in the sorting process that come from cherry that grow with one single seeds in their center.
